Coconut Rice

Ingredients

  • 1 Tablespoon Olive Oil
  • 1/4 Cup Finely Chopped Onion
  • 1 Teaspoon Ginger
  • 1 Clove Garlic, Minced
  • 1 1/4 Cups Jasmine or Basmati Rice
  • 1 Can Light Coconut Milk
  • 3/4 Cup Chicken Broth
  • 1 Whole Cinnamon Stick
  • 1/2 Teaspoon Salt
  • 1 Tablespoon Fresh Lime Juice
  • 2 Whole Green Onions, Chopped

Directions

  1. Heat oil in a medium saucepan over medium heat. Add onion; cook 3 minutes, stirring frequently.
  2. Add ginger and garlic, cook 30 seconds, stirring constantly.
  3. Add rice; cook 1 minute, stirring constantly. Stir in coconut milk, broth, cinnamon stick, and salt; bring to a boil.
  4. Cover and simmer 18 minutes or until liquid is absorbed and rice is tender. Remove from heat; let stand 5 minutes.
  5. Drizzle with lime juice and fluff with a fork. Sprinkle with green onions.
