Cheesy Quinoa

Ingredients

  • 1 1/2 Cups Quinoa, Rinsed and Drained
  • 1 Pinch Salt
  • 2 Cloves Garlic, Minced
  • 2 Whole Eggs
  • 1 Cup Non-Fat Milk
  • 1 1/2 Cups Cheddar Cheese, Shredded
  • 1/2 Cup Panko

Directions

  1. Cook quinoa to package instructions until fully cooked.
  2. Preheat oven to 350°.
  3. Coat 9x13 pan with cooking spray.
  4. Whisk together eggs and milk in large bowl. Fold in all other ingredients except for the panko.
  5. Place mixture into pan and top with pank. Bake 30-35 minutes, until top is golden brown.
