Au Gratin Potatoes

Ingredients

Base
  • 3 Whole Russet Potatoes
  • 1 Whole Onion
Sauce
  • 3 Tablespoons Butter
  • 3 Tablespoons Flour
  • 1/2 Teaspoon Salt
  • 2 Cups Milk
  • 1 1/2 Cups Shredded Cheddar Cheese

Directions

  1. Preheat oven to 400° and butter a casserole dish. Use a casserole dish with approximately 2 quarts of volume per recipe.
  2. Cut the potatoes and onions into quarter-inch-thick rings.
  3. Layer half of the potatoes into the bottom of the prepared casserole dish. Top with the onion slices and layer remaining potatoes on top. Season with salt and pepper to taste.
  4. In a saucepan, melt butter over medium heat. Mix in the flour and salt, whisking constantly.
  5. Stir in milk and cook until mixture has thickened. Stir in cheese all at once and continue stirring until all cheese is melted, about 1 minute.
  6. Pour cheese sauce over potato and onions in casserole dish.
  7. Cover with aluminum foil and bake for 1.5 hours.
  8. Add cheese on top after baking is complete and broil if desired.
