Chicken Nuggets

Ingredients

  • 1 3/4 Cups Panko Bread Crumbs
  • 1/2 Cup Whole Milk
  • 1 Whole Egg
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Kosher Salt
  • 1 Pound Ground Chicken or Turkey
  • 1 Cup Finely Grated Parmesan
  • 4 Tablespoons Unsalted Butter
  • 2 Tablespoons Olive Oil

Directions

  1. In a large bowl, combine half of the panko, milk, egg, garlic powder and salt. Stir together and let sit for 5 minutes.
  2. Add the chicken and 3/4 of the parmesan. Stir with your hands until combined, avoiding overmixing.
  3. Roll into 24 balls about the size of a golf ball (about 2 tablespoons each) and place on a sheet pan or plate. In a medium bowl, stir together the remaining panko and Parmesan. Toss each meatball in the panko-cheese mixture, pressing gently to adhere. Refrigerate for 5 minutes.
  4. Bake at 375 for approximately 15 minutes, until cooked through.
