Pulled Pork

Ingredients

  • 4 Pounds Pork Shoulder Roast
  • 1 Teaspoon Vegetable Oil
  • 1 Whole Onion, Coarsely Chopped
  • 1/2 Cup Apple Cider Vinegar
  • 1/2 Cup Chicken Broth
  • 1 Tablespoon Prepared Yellow Mustard
  • 1 Tablespoon Worcestershire Sauce
  • 1 Tablespoon Chili Powder
  • 1 Cup Barbecue Sauce
  • 2 Whole Garlic Cloves, Minced
  • 1 1/2 Teaspoons Dried Thyme
  • 1/4 Cup Brown Sugar

Directions

  1. Pour the vegetable oil into the bottom of the instant pot and place onions on top.
  2. Cut pork into 2 inch cubes and place on top of onion bed.
  3. Whisk other ingredients together and pour over pork.
  4. Cook at pressure for 1 hour. Shred and enjoy.
