Mexican Rice

Ingredients

Rice
  • 1 1/2 Cups Long Grain White Rice
  • 1/4 Cup Vegetable or Canola Oil
Base
  • 15 Ounces Tomato Sauce
  • 1 Teaspoon Garlic, Minced
  • 1/4 Cup Onion, Diced
Seasonings
  • 1 Pinch Salt and Pepper
  • 1 Pinch Cumin
  • 1 Pinch Chili Powder
Water
  • 1 1/2 Cups Water

Directions

  1. Turn instant pot to saute mode, once hot add oil and rice. Saute, stirring often, until lightly golden, about 5 minutes.
  2. Add desired seasonings and stir into rice, allowing seasonings to bloom. Turn off saute mode.
  3. Add base ingredients and stir well. Add water and stir well.
  4. Cook at high pressure for 3-4 minutes, allow pressure to naturally release for 10 minutes.
  5. Fluff with a fork and enjoy.
Notes

Diced carrot, frozen peas, or other ingredients can be added as desired
