Mexican Rice
Ingredients
Rice
- 1 1/2 Cups Long Grain White Rice
- 1/4 Cup Vegetable or Canola Oil
Base
- 15 Ounces Tomato Sauce
- 1 Teaspoon Garlic, Minced
- 1/4 Cup Onion, Diced
Seasonings
- 1 Pinch Salt and Pepper
- 1 Pinch Cumin
- 1 Pinch Chili Powder
Water
- 1 1/2 Cups Water
Directions
- Turn instant pot to saute mode, once hot add oil and rice. Saute, stirring often, until lightly golden, about 5 minutes.
- Add desired seasonings and stir into rice, allowing seasonings to bloom. Turn off saute mode.
- Add base ingredients and stir well. Add water and stir well.
- Cook at high pressure for 3-4 minutes, allow pressure to naturally release for 10 minutes.
- Fluff with a fork and enjoy.
Notes
Diced carrot, frozen peas, or other ingredients can be added as desired
