Ham And Potato Soup

Ingredients

  • 4 Pounds Potatoes, Peeled and Cubed
  • 1 Whole Onion, Minced
  • 5 Cups Chicken Broth
  • 4 Tablespoons Butter
  • 1/3 Cup Cream Cheese
  • 2 Cups Shredded Cheddar Cheese
  • 1/3 Cup Greek Yogurt
  • 1/4 Teaspoon Salt
  • 1/4 Teaspoon Pepper
  • 1 Cup Milk
  • 1/2 Cup Ham, Cubed

Directions

  1. Add onion, potato, and chicken broth to instant pot. Cook at pressure for 10 minutes.
  2. Quick-release pressure and add all other ingredients except ham. Use immersion blender to mix thoroughly.
  3. Add ham to soup and enjoy.
Notes

Top with green onions if desired.
