Ham And Potato Soup
Ingredients
- 4 Pounds Potatoes, Peeled and Cubed
- 1 Whole Onion, Minced
- 5 Cups Chicken Broth
- 4 Tablespoons Butter
- 1/3 Cup Cream Cheese
- 2 Cups Shredded Cheddar Cheese
- 1/3 Cup Greek Yogurt
- 1/4 Teaspoon Salt
- 1/4 Teaspoon Pepper
- 1 Cup Milk
- 1/2 Cup Ham, Cubed
Directions
- Add onion, potato, and chicken broth to instant pot. Cook at pressure for 10 minutes.
- Quick-release pressure and add all other ingredients except ham. Use immersion blender to mix thoroughly.
- Add ham to soup and enjoy.
Notes
Top with green onions if desired.
