Creamy Tortellini Soup

Ingredients

Base
  • 1 Whole Yellow Onion, Diced
  • 1/3 Cup All Purpose Flour
  • 1 Tablespoon Dried Basil
  • 2 Cloves Garlic, Minced
  • 2 Tablespoons Tomato Paste
  • 3 Tablespoons Olive Oil
  • 4 Cups Chicken Broth
  • 29 Ounces Diced Tomatoes
  • 1 1/2 Pounds Chicken Thighs or Breasts
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Pepper
Extra
  • 4 Cups Cheese Tortellini
  • 3 Cups Packed Spinach
  • 1/2 Cup Parmesan Cheese
  • 1 Cup Heavy Cream or Half and Half

Directions

  1. Add all base ingredients to the instant pot and stir together.
  2. Cook at pressure for 10 minutes and allow pressure to release naturally.
  3. Remove chicken, shred, and add back to instant pot.
  4. Add extra ingredients, stir, and cook on slow cook mode for 10 minutes.
