Chicken Broccoli and Rice

Ingredients

Saute
  • 1 Tablespoon Oil
  • 1 1/2 Pounds Chicken Breasts, Cubed
  • 1 Whole Onion, Diced
Rice
  • 1 Cup Long Grain Rice
  • 2 1/2 Cups Chicken Broth
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Salt
  • 3/4 Teaspoon Pepper
Finish
  • 1/2 Cup Milk, Warmed
  • 2 Cups Fresh Broccoli, Chopped
  • 2 Cups Shredded Cheddar Cheese

Directions

  1. Turn Instant Pot onto saute. Add saute ingredients and cook until onion begins to soften, 3-4 minutes.
  2. Spread the chicken across the bottom of the instant pot. Add Rice ingredients and do not stir.
  3. Cook on manual high pressure for 8 minutes, let naturally release for 5-10 minutes.
  4. Release any remaining pressure, open the lid and quickly stir in the broccoli and warmed milk. Close the lid and let rest an additional 5-10 minutes.
  5. Stir in the cheese until well combined, adding more warmed milk if needed. Serve immediately.
