Chicken and Rice

Ingredients

  • 4 Whole Chicken Breasts
  • 1 Whole Onion, Chopped
  • 1 Tablespoon Olive Oil
  • 2 Cloves Garlic, Minced
  • 2 1/2 Cups Chicken Broth
  • 2 Tablespoons Lemon Juice
  • 1 Cup Basmati Rice, Rinsed
  • 1 Tablespoon Italian Seasoning
  • 1 Tablespoon Butter
  • 3 Whole Carrots, Peeled and Sliced

Directions

  1. Season both sides of each piece of chicken with salt and pepper.
  2. Add the oil and onion to the Instant Pot and saute for 3-4 minutes.
  3. Stir in the garlic, then add the chicken broth, lemon juice, rice (rinse it first), Italian seasoning, butter, and carrots.
  4. Mix ingredients together and add the chicken pieces on top.
  5. Cook on high pressure for 18 minutes.
  6. Quick-release pressure and serve immediately.
