Carnitas

Ingredients

  • 6 Pounds Pork Butt or Shoulder Roast
  • 1 1/2 Tablespoons Salt
  • 1 Tablespoon Dried Oregano
  • 2 Teaspoons Ground Cumin
  • 1 Teaspoon Ground Black Pepper
  • 1/2 Teaspoon Chili Powder
  • 1/2 Teaspoon Paprika
  • 2 Tablespoons Olive Oil
  • 1 Cup Orange Juice
  • 1 Whole Onion, Coarsely Chopped
  • 4 Cloves Garlic, Minced

Directions

  1. Trim excess fat from pork, cut into 2 inch cubes and transfer to bowl.
  2. Combine salt, oregano, cumin, black pepper, chili powder, and paprika together in a bowl. Rub pork cubes with spice mixture. Add minced garlic and olive oil, mix pork cubes until well coated; place in pressure cooker.
  3. Cover pork cubes with orange juice and onion.
  4. Cook at high pressure for 60 minutes. Let pressure come down naturally for about 15 minutes.
  5. Release pressure and shred meat.
