Basic Coconut Rice

Ingredients

  • 3 Cups Basmati Rice, Rinsed
  • 13 1/2 Ounces Coconut Milk
  • 1 1/3 Cups Low Sodium Chicken Stock
  • 1 Whole Lime, Zested

Directions

  1. Add all ingredients to instant pot and stir to combine.
  2. Cook at high pressure for 4 minutes.
  3. Allow pressure to come down naturally for 10 minutes.
  4. Quick-release remaining pressure and fluff rice.
