Basic Coconut Rice
- 3 Cups Basmati Rice, Rinsed
- 13 1/2 Ounces Coconut Milk
- 1 1/3 Cups Low Sodium Chicken Stock
- 1 Whole Lime, Zested
- Add all ingredients to instant pot and stir to combine.
- Cook at high pressure for 4 minutes.
- Allow pressure to come down naturally for 10 minutes.
- Quick-release remaining pressure and fluff rice.
