Barbacoa

  • 3 Pounds Beef Chuck Roast
  • 1 Cup Beef Broth
  • 3 Whole Bay Leaves
Puree
  • 1/2 Whole Lime, Juiced
  • 1/3 Cup Apple Cider Vinegar
  • 3 Whole Chipotle Peppers In Adobo Sauce
  • 1 Tablespoon Adobo Sauce From Peppers
  • 1 1/2 Tablespoons Ground Cumin
  • 1/2 Tablespoon Black Pepper
  • 1/2 Tablespoon Salt
  • 1 Tablespoon Tomato Paste
  • 2 Tablespoons Oregano
  • 1/4 Teaspoon Cinnamon
  • 1 Teaspoon Onion Powder
  • 1/4 Teaspoon Ground Cloves

Directions

  1. Prepare the roast by removing any large pieces of fat and chopping into 2-inch cubes.
  2. In a blender, blend together puree ingredients. Puree until smooth.
  3. Add pot ingredients to Instant Pot.
  4. Cover beef with puree.
  5. Cook at high pressure for 60 minutes.
  6. Shred meat and return to remaining liquid. Serve and enjoy!
