Curry Chicken Fried Rice

Ingredients

  • 1/4 Cup Neutral-Tasting Oil
  • 1/2 Cup Red Onion, Diced
  • 1 1/2 Tablespoons Curry Powder
  • 1 Pinch Salt and Pepper
  • 1 Pound Chicken, Cubed
  • 1 1/2 Cups Frozen Mixed Vegetables
  • 2 1/2 Cups Cooked Rice
  • 1/3 Cup Cilantro, Chopped
  • 1 Whole Scallion, Sliced
  • 1 Whole Fried Egg (Optional)

Directions

  1. In a nonstick pan on medium-high, heat oil then add red onion and cook, stirring occasionally, until translucent, 2 to 3 minutes.
  2. Add the curry powder, chicken, and salt to taste. Cook, stirring occasionally, until chicken is cooked through.
  3. Add the frozen vegetables and pepper to taste. Cook and stir for 1 minute.
  4. Stir in the rice and cook until rice is warm, about 4 minutes.
  5. Serve hot, topping each bowl with scallions and a fried egg if desired.
