Curry Chicken Fried Rice

Directions

In a nonstick pan on medium-high, heat oil then add red onion and cook, stirring occasionally, until translucent, 2 to 3 minutes.

Add the curry powder, chicken, and salt to taste. Cook, stirring occasionally, until chicken is cooked through.

Add the frozen vegetables and pepper to taste. Cook and stir for 1 minute.

Stir in the rice and cook until rice is warm, about 4 minutes.

Serve hot, topping each bowl with scallions and a fried egg if desired.
