Carrot Cake

Ingredients

Tasty bits
  • 2 Cups Grated Carrots
  • 8 Ounces Crushed Pineapple, Drain and Keep Juice
  • 1/2 Cup Chopped Walnuts
Dry ingredients
  • 2 Cups Flour
  • 2 Teaspoons Cinnamon
  • 2 Teaspoons Baking Powder
  • 1 Teaspoon Salt
  • 1 1/2 Teaspoons Baking Soda
Wet ingredients
  • 4 Whole Eggs
  • 1 1/2 Cups Oil
  • 2 Cups Sugar
Frosting
  • 1 3/4 Cups Powdered Sugar
  • 4 Ounces Butter
  • 8 Ounces Cream Cheese
  • 1 Teaspoon Vanilla

Directions

  1. Mix the tasty bits together in a small bowl, also mix the dry ingredients together in a separate small bowl.
  2. In a large mixing bowl, mix together the wet ingredients. Add flour and spices. Add tasty bits. Mix together.
  3. Bake at 350° for 40-45 minutes in a greased pan.
  4. Mix cream cheese and butter. Add vanilla, powdered sugar, and a little pinapple juice if desired, mix well to create the frosting.
  5. Frost and enjoy.
Notes

Do NOT put raisins in this cake. Only monsters put raisins in carrot cake.
