Carrot Cake
Ingredients
Tasty bits
- 2 Cups Grated Carrots
- 8 Ounces Crushed Pineapple, Drain and Keep Juice
- 1/2 Cup Chopped Walnuts
Dry ingredients
- 2 Cups Flour
- 2 Teaspoons Cinnamon
- 2 Teaspoons Baking Powder
- 1 Teaspoon Salt
- 1 1/2 Teaspoons Baking Soda
Wet ingredients
- 4 Whole Eggs
- 1 1/2 Cups Oil
- 2 Cups Sugar
Frosting
- 1 3/4 Cups Powdered Sugar
- 4 Ounces Butter
- 8 Ounces Cream Cheese
- 1 Teaspoon Vanilla
Directions
- Mix the tasty bits together in a small bowl, also mix the dry ingredients together in a separate small bowl.
- In a large mixing bowl, mix together the wet ingredients. Add flour and spices. Add tasty bits. Mix together.
- Bake at 350° for 40-45 minutes in a greased pan.
- Mix cream cheese and butter. Add vanilla, powdered sugar, and a little pinapple juice if desired, mix well to create the frosting.
- Frost and enjoy.
Notes
Do NOT put raisins in this cake. Only monsters put raisins in carrot cake.
