Cucumber Martini


Cucumber Extract
  • 1 Whole Cucumber
  • 1/2 Teaspoon Kosher Salt
  • 2 Tablespoons Dry Vermouth
  • 2 Whole Large Mint Leaves
  • 1/2 Ounce Lime Juice (Half of One Lime per Martini)
  • 1/4 Ounce Simple Syrup
  • 2 1/2 Ounces Quality Vodka
  • 1 Ounce Cucumber Extract


  1. Make the cucumber extract: Shred the cucumber into a bowl. Add vermouth and kosher salt, stir and allow it to rest for 10 minutes. Strain the cucumber through a fine filter or cheesecloth into a container, pressing to extract juice.
  2. Add mint leaves and lime juice to shaker, muddle lightly.
  3. Add simple syrup, vodka, and cucumber extract. Stir and add ice, shake vigorously.
  4. Strain into chilled glass. Garnish with a cucumber slice and/or mint leaf.
