Coconut Rice
Ingredients
- 1 Tablespoon Olive Oil
 - 1/4 Cup Finely Chopped Onion
 - 1 Teaspoon Ginger
 - 1 Clove Garlic, Minced
 - 1 1/4 Cups Jasmine or Basmati Rice
 - 1 Can Light Coconut Milk
 - 3/4 Cup Chicken Broth
 - 1 Whole Cinnamon Stick
 - 1/2 Teaspoon Salt
 - 1 Tablespoon Fresh Lime Juice
 - 2 Whole Green Onions, Chopped
 
Directions
- Heat oil in a medium saucepan over medium heat. Add onion; cook 3 minutes, stirring frequently.
 - Add ginger and garlic, cook 30 seconds, stirring constantly.
 - Add rice; cook 1 minute, stirring constantly. Stir in coconut milk, broth, cinnamon stick, and salt; bring to a boil.
 - Cover and simmer 18 minutes or until liquid is absorbed and rice is tender. Remove from heat; let stand 5 minutes.
 - Drizzle with lime juice and fluff with a fork. Sprinkle with green onions.
