Pulled Pork
Ingredients
- 4 Pounds Pork Shoulder Roast
- 1 Teaspoon Vegetable Oil
- 1 Whole Onion, Coarsely Chopped
- 1/2 Cup Apple Cider Vinegar
- 1/2 Cup Chicken Broth
- 1 Tablespoon Prepared Yellow Mustard
- 1 Tablespoon Worcestershire Sauce
- 1 Tablespoon Chili Powder
- 1 Cup Barbecue Sauce
- 2 Whole Garlic Cloves, Minced
- 1 1/2 Teaspoons Dried Thyme
- 1/4 Cup Brown Sugar
Directions
- Pour the vegetable oil into the bottom of the instant pot and place onions on top.
- Cut pork into 2 inch cubes and place on top of onion bed.
- Whisk other ingredients together and pour over pork.
- Cook at pressure for 1 hour. Shred and enjoy.
