Chicken Broccoli and Rice
Ingredients
Saute
- 1 Tablespoon Oil
- 1 1/2 Pounds Chicken Breasts, Cubed
- 1 Whole Onion, Diced
Rice
- 1 Cup Long Grain Rice
- 2 1/2 Cups Chicken Broth
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Salt
- 3/4 Teaspoon Pepper
Finish
- 1/2 Cup Milk, Warmed
- 2 Cups Fresh Broccoli, Chopped
- 2 Cups Shredded Cheddar Cheese
Directions
- Turn Instant Pot onto saute. Add saute ingredients and cook until onion begins to soften, 3-4 minutes.
- Spread the chicken across the bottom of the instant pot. Add Rice ingredients and do not stir.
- Cook on manual high pressure for 8 minutes, let naturally release for 5-10 minutes.
- Release any remaining pressure, open the lid and quickly stir in the broccoli and warmed milk. Close the lid and let rest an additional 5-10 minutes.
- Stir in the cheese until well combined, adding more warmed milk if needed. Serve immediately.
