Chicken and Rice
Ingredients
- 4 Whole Chicken Breasts
- 1 Whole Onion, Chopped
- 1 Tablespoon Olive Oil
- 2 Cloves Garlic, Minced
- 2 1/2 Cups Chicken Broth
- 2 Tablespoons Lemon Juice
- 1 Cup Basmati Rice, Rinsed
- 1 Tablespoon Italian Seasoning
- 1 Tablespoon Butter
- 3 Whole Carrots, Peeled and Sliced
Directions
- Season both sides of each piece of chicken with salt and pepper.
- Add the oil and onion to the Instant Pot and saute for 3-4 minutes.
- Stir in the garlic, then add the chicken broth, lemon juice, rice (rinse it first), Italian seasoning, butter, and carrots.
- Mix ingredients together and add the chicken pieces on top.
- Cook on high pressure for 18 minutes.
- Quick-release pressure and serve immediately.
