Carnitas
Ingredients
Meat
- 6 Pounds Pork Butt or Shoulder Roast
Spices
- 1 1/2 Tablespoons Salt
- 1 Tablespoon Dried Oregano
- 2 Teaspoons Ground Cumin
- 1 Teaspoon Ground Black Pepper
- 1/2 Teaspoon Chili Powder
- 1/2 Teaspoon Paprika
Other
- 2 Tablespoons Olive Oil
- 1 Cup Orange Juice
- 1 Whole Onion, Coarsely Chopped
- 4 Cloves Garlic, Minced
Directions
- Trim excess fat from pork, cut into 2 inch cubes and transfer to bowl.
- Combine spices together in a bowl. Rub pork cubes with spice mixture. Add minced garlic and olive oil, mix pork cubes until well coated; place in pressure cooker.
- Cover pork cubes with orange juice and onion.
- Cook at high pressure for 60 minutes. Let pressure come down naturally for about 15 minutes.
- Release pressure and shred meat.
