Pot
- 3 Pounds Beef Chuck Roast
- 1 Cup Beef Broth
- 3 Whole Bay Leaves
Puree
- 1/2 Whole Lime, Juiced
- 1/3 Cup Apple Cider Vinegar
- 3 Whole Chipotle Peppers In Adobo Sauce
- 1 Tablespoon Adobo Sauce From Peppers
- 1 1/2 Tablespoons Ground Cumin
- 1/2 Tablespoon Black Pepper
- 1/2 Tablespoon Salt
- 1 Tablespoon Tomato Paste
- 2 Tablespoons Oregano
- 1/4 Teaspoon Cinnamon
- 1 Teaspoon Onion Powder
- 1/4 Teaspoon Ground Cloves
Directions
- Prepare the roast by removing any large pieces of fat and chopping into 2-inch cubes.
- In a blender, blend together puree ingredients. Puree until smooth.
- Add pot ingredients to Instant Pot.
- Cover beef with puree.
- Cook at high pressure for 60 minutes.
- Shred meat and return to remaining liquid. Serve and enjoy!
