Curry Chicken Fried Rice
Ingredients
- 1/4 Cup Neutral-Tasting Oil
- 1/2 Cup Red Onion, Diced
- 1 1/2 Tablespoons Curry Powder
- 1 Pinch Salt and Pepper
- 1 Pound Chicken, Cubed
- 1 1/2 Cups Frozen Mixed Vegetables
- 2 1/2 Cups Cooked Rice
- 1/3 Cup Cilantro, Chopped
- 1 Whole Scallion, Sliced
- 1 Whole Fried Egg (Optional)
Directions
- In a nonstick pan on medium-high, heat oil then add red onion and cook, stirring occasionally, until translucent, 2 to 3 minutes.
- Add the curry powder, chicken, and salt to taste. Cook, stirring occasionally, until chicken is cooked through.
- Add the frozen vegetables and pepper to taste. Cook and stir for 1 minute.
- Stir in the rice and cook until rice is warm, about 4 minutes.
- Serve hot, topping each bowl with scallions and a fried egg if desired.
